I've been doing a lot of cooking lately, & forgot to share :)

Please don't mind my poor representation, but all of these were delicious. 



Chicken Noodle Soup Casserole

1/2 cup chopped onion

3 tablespoons butter or 3 tablespoons margarine, melted
2 (10 3/4 ounce) cans cream of chicken soup
2 cups shredded cheddar cheese, divided
1 cup milk
3 1/2 cups chopped cooked chicken
2 1/2 cups cooked macaroni
salt
pepper
1/4 cup Ritz cracker crumbs
Directions:

1. In a large skillet over med-high heat, saute onions in butter until onions are tender.
2. Add in soup and 1 ½ cups cheese; gradually stir in milk.
3. Cook over medium heat until cheese melts; stir in chicken and macaroni; taste and adjust seasoning with salt and pepper.
4. Transfer mixture to a greased 2 ½ quart casserole; sprinkle with cracker crumbs.
5. Bake in a preheated 350° oven for 30 minutes or until heated through.
6. Top with remaining ½ cup cheese and bake 5 minutes.




Barbeque Chicken

4-6 pieces boneless skinless chicken breasts 
1 bottle BBQ sauce 
1/4 c vinegar
1/4 c brown sugar
1/2 - 1 tsp. garlic powder

1. mix BBQ sauce with all ingredients listed under it. 
2. place chicken in crock pot. 
3. pour sauce over it and cook on LOW for 4-6 hours.





Chili



Mint Chocolate Chip Brownie
For the Brownie Layer
1 box of brownie mix (9×13 size) + ingredients you need to prepare brownies (eggs, oil, water)
1 cup of semi-sweet chocolate chips

For the Frosting Layer
1/2 cup unsalted butter, softened
1/2 cup shortening
1 tsp vanilla extract
1 tsp peppermint extract
5 to 5.5 cups of powdered sugar
4 Tbsp milk3/4 cup semi-sweet chocolate, grated or coarsely chopped in the food processor

green food coloring (optional)

For the Chocolate Layer
2 cups semi-sweet chocolate chips
1 Tbsp canola or vegetable oil

1. Preheat oven to 350* Prepare brownies according to package, except stir in 1 cup of semi sweet chocolate chips. Bake according to package, in a greased 9×13 pan. When you throw it in the oven, take your butter out to soften for the frosting, if you haven’t already.
2. COOL BROWNIE COMPLETELY.
3. While brownie is cooling, make your frosting. Using an electric mixer, cream together butter, shortening, vanilla, and mint extract. Add in powdered sugar one cup at a time, and then add in milk, one tablespoon at a time until frosting is smooth and desired consistency has been reached. Stir in food coloring if desired, and then fold in chocolate shavings. Try not to eat it all at this step.
4. Once brownie is completely cooled, spread frosting evenly over the brownie. Throw it in the fridge so that the frosting can harden. I’d say give it at least an hour, maybe two. You want it nice and cold–so it is firm.
5. When it has cooled and firmed up, prepare your chocolate for the final layer. In a small bowl, combine 2 cups of chocolate chips with 1 tablespoon of oil. Melt in microwave or over a double boiler. If you choose the microwave, make sure to do it in thirty-second intervals and stir well each time. You don’t want it to over-heat. Once it is smooth, spread it over the frosting layer and allow to harden.




Baked Garlic Parmesan Chicken
Ingredients:
2 cups grated Parmesan cheese 

1 package Good Seasons Italian Dressing mix 
1/2 teaspoon garlic powder 
6 boneless skinless chicken breast halves
Can of tomato sauce
Directions:
1. Preheat oven to 400 degrees F.
2. Mix cheese, dressing mix and garlic powder.
3. Moisten chicken breasts in egg, coat with cheese mixture. Top with parmesan cheese & tomato sauce. Place in shallow baking dish.
4. Bake 20 to 25 min. or until chicken is no longer pink in the center.



Katie's Favorite Sugar Cookies (My mom's recipe)
My boyfriend's nieces decorated them :)

Ingredients

2 cups sifted flour
1 large egg
1/2 tsp. baking powder
1/2 tsp. baking soda
1 & 1/2 sticks of butter
1 cup sugar
1/2 tsp. salt
2 tbsp milk
1 tsp. vanilla

1. Mix flour, baking soda, baking powder, & salt together in one bowl.
2. In another bowl mix sugar & butter, then add in the egg, milk, & vanilla.
3. Combine all ingredients
4. Separate dough into two halves
5. pat flat into plastic wrap, & put in refrigerator for at least an hour (only work with chilled dough)
6. Roll dough on a surface with flour & cut into shapes
7. Bake at 350 degrees for 8-10 minutes

Icing
I just throw all these ingredients together until I get the right consitency I'm looking for :)
-Orange juice
-vanilla
-Milk
-powdered sugar 


COOKIES:

1 cup (2 sticks) salted butter, at room temperature
1 cup granulated white sugar
1/2 cup light brown sugar
3/4 cup pure unsweetened pumpkin puree
1 large egg
2 teaspoons vanilla extract
3 3/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
ROLLING SUGAR:

1/2 cup granulated white sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon allspice

Directions:

1. In a large bowl, use an electric mixer to cream the butter until fluffy. Add sugars and pumpkin puree and beat well. Mix in egg and vanilla, scraping down sides of the bowl to incorporate all of the ingredients.
2. In a medium bowl, whisk together flour, baking powder, salt and ground cinnamon. Beat flour mixture into liquid mixture a little at a time just until incorporated.
3. Cover dough with plastic and chill at least an hour, or until dough becomes slightly firm.
4. When ready to bake, preheat oven to 350°F. Line baking sheets with parchment paper (or spray with nonstick spray). Mix rolling sugar ingredients in a small bowl.
5. Remove cookie dough from refrigerator. Use a medium cookie scoop (1 1/2 Tablespoons) or a large spoon to scoop out dough and roll into balls. Use your hands to roll the balls in the cinnamon sugar and make sure they're coated really well. Place 2 inches apart on the prepared baking sheets. Use a glass with a nice, flat bottom to dip in sugar and flatten the balls.
6. Bake at 350°F. for 10 to 14 minutes, or until they are slightly firm to the touch. Let cool on baking sheets for 5 minutes or so, then remove them to a wire rack to cool completely.

Chicken Spaghetti


1 box of penne noodles
1 cup parmesan cheese
1/2 red bell pepper chopped
1/2 yellow bell pepper chopped

1 tsp. garlic minced
1 can of tomato sauce
1 lb skinless boneless chicken

1. Cook chicken on stove top (chopped up), while your doing that cook the noodles in boiling water as well.
2. Saute the garlic, tomato sauce, red pepper, and yellow pepper in oil
3. Add everything together




Burrito

1 pound ground beef
1 can re fried beans
1 package taco seasoning
1 can black olives
1 cup grated cheese
add lettuce on top if you'd like
1 package soft shells

1. Cook ground beef in a skillet, then drain
2. Stir in taco seasoning with the water amount indicated on the package
3. Add beans & olives
4. Cook for 5 more minutes

Home made Salsa
6-8 roma tomatoes
1/4 cup cilantro
1/2 cup white onion
1 jalapeno cored, deseeded
1/8 minced garlic
1 lime, use the juice
salt & sugar to taste

1.Add all the ingredients together, in no particular order, chop everything :)



Cheddar French Onion Chicken

Ingredients:

2 cups (4 oz.) FRENCH'S® Original or Cheddar French Fried Onions
2 tbsp. all-purpose flour
4 (5 oz.) boneless skinless chicken breasts
egg, beaten

Directions:

Place French Fried Onions and flour into plastic bag. Lightly crush with hands or with rolling pin. Transfer to pie plate or waxed paper.
Dip chicken into egg; then coat with onion crumbs, pressing firmly to adhere. Place chicken on baking sheet.
Bake at 400°F for 20 min. or until no longer pink in center.


Baked Garlic Brown Sugar Chicken
4 boneless skinless chicken breasts see note below

4 garlic cloves, minced
4 tablespoons brown sugar
3 tablespoons olive oil

Note: I used frozen thin cut chicken breasts without thawing and it turned out perfect. I tend to avoid thick, bulky chicken breast.Directions
1. Preheat oven to 450°F and lightly grease a casserole dish.

2. In small sauté pan, sauté garlic with the oil until tender.
3. Remove from heat and stir in brown sugar.
4. Place chicken breasts in a greased baking dish and cover with the garlic and brown sugar mixture.
5. Add salt and pepper to taste.
6. Bake uncovered for 30 minutes or until juice runs clear.




Chicken Alfredo
I apologize for not having a recipe for the chili & chicken alfredo, but I literally threw them both together & they turned out great, it doesn't take much to make either of them :)

  4. Which to make first?! Yummmm. The brownies inspired me to try that with mint chocolate chip icecream since I'm not a big fan of icing. These all look amazing and give me ideas. I keep making the same things over and over and need to spice it up.

  7. OMG I was hungry while I browsing through these & now I'm starving lol Definitely going to have to try some of these out!
    Also, I've tried to figure out how to follow you and I can't lol do you have a button somewhere?
